you won't believe it... it is delicious! the first step easier than you thought and now let's go...


INGREDIENTS

800 gramms of non pealed potatoes - cooked the day b4
butter - (ghee or self made ghee)
salt
pepper
some nutmeg (I love it that way)
an iron pan
a strider

DIRECTIONS

peel potatoes and stride them not too fine - heat pan on cooker - put butter in pan - add strided potatoes one layer then salt, a little bit of pepper and very very little nutmeg (should you not be fond of nutmeg - just skip it). Go on - till all layers are there - let it sizzle on middle temperature - stir - not too much for then you may get mashed potatoes - always add some more butter (if necessary - it should not burn) - the form of the strided potatoes should still be visible...
When it has turned to crispy golden color then make the shape - let it sizzle till it turns golden brown - when that has happened - take a huge plate - one, which is bigger than your pan - put it over the pan and turn - then the Roeschti is on the plate - let it glide back into the pan with the paler side to also turn that one into a golden brown color - serve freshly - you may serve it with a nice sauce (either vegetarian or with meat - usually in Switzerland you will get: minced meat Zurich style (Zuercher Geschnetzeltes) or you might do the same with a nice mushroom sauce - and a salad on the side of course.
